The Art of Blending looks into the mind and work of spice master Lior Lev Sercarz, who has created custom blends for some of the world's top culinary minds. Since launching La Boîte á Epice in 2006, he has released 41 of his blends to the public, which he sells in gourmet shops and in his Manhattan shop and art gallery- La Boîte. Sercarz's first cookbook tells the stories behind these blends and offers recipes for each contributed by his clients, which include chefs Daniel Boulud, Eric Ripert, Michelle Bernstein and Paul Kahan; Parisian baker Apollonia Poilâne and Top Chef's Gail Simmons. Lior Lev Sercarz was raised in Israel and trained as a chef in France, where he was introduced to the fine art of spice blending by Olivier Roellinger. He moved to New York in 2002 to cook for Daniel Boulud, and left the restaurant kitchen in 2006 to work with spices full time.

The Art of Blending

This is a beautiful book, but so disappointing. Nowhere was it indicated that the recipes require the purchase of pre-blended spices purchased from the author's store, La Boite a Epice. I was looking to learning how to blend my own spices--I recently received the new Cuisinart spice mill as a gift. It should be noted on Amazon.com that the recipes are of no use without the author's blends.

False Advertising

This book is called Art of Blending yet nowhere in the book is there anything about blending spices, recipes for spice mixes, or even suggestions how one might mix spices. Instead it seems like a book to sell spices from the authors store. If for some reason you cant get your hands on the spices then you dont even have a sense of what a good substitute would be... In short, it is a completely useless sales tool for the author to sell rather expensive spice mixes. disappointing.

The art of pretension

Lior Lev Sercarz is an artisan blender of spices, and really has some lovely mixes, at least by the sound of things. I wouldn't know, he doesn't actually share any recipes for his spice blends within "The Art of Blending."
The book is based entirely on spice blends that you can only get at very select market locations, and each blend runs at about 12-15 dollars a pop. While I'm sure Mr. Sercarz uses some spices that aren't readily available at places like Penzey's, or specialty spice shops, such as smoked cinnamon, many of his blends call for readily available ingredients like lavender, lemon peel, cumin, etc.
This book is sort of like buying some assemble-your-self furniture, taking it home, opening up, and finding out that you need to buy special tools from the manufacturer, and that every hole/screw requires a different tool. There is absolutely no reason for Lior not to include his blends, beyond narcissism and greed.
As a note, the photography is pretty lovely and it is amazing that they came up with new and impressive ways to shoot the different spice blends and their components. It is worth fingering through for that, but I would consider getting this book as a gift a passive aggressive statement.
